Breakfast has always been one of my favorite meals of the day. Mostly because I am an early riser and I love to get up early to workout and then follow that with a big, delicious breakfast!

Breakfast of Champions


1) 1.5 cups of arugula (or any leafy greens)

2) 2 fried eggs

3) 1/3 cup of cooked black beans

4) shredded carrot

5) salsa (tomato, onion, jalapeno, olive oil)


In a bowl, mix black beans with shredded carrots and salsa

Place greens on a plate and top with two fried eggs, then scoop beans with salsa on top of the eggs



Sweet Morning with sweet potato


1/2 sweet potato

2 eggs

1/2 avocado 


Boil sweet potato until fork can pierce through easily (about 10 mins)

Boil 2 eggs (can use the same pot as the sweet potato as they take approximately the same time)  

Take sweet potato out of water and mash on a plate with some coconut oil, salt and pepper 

Peel eggs and chop into thin slices, place on top of sweet potato

Slice 1/2 an avocado and put on top of eggs

Season with salt, pepper, garlic and hot sauce  


Smoothie Bowl

Begin with your typical smoothie recipe:

1) Blend fresh greens (1 cup), fruit (1/2 cup), 1/2 banana, 1/2 avocado and a small amount of water

2) Blend until thick and creamy (want consistency to be thick so that the toppings do not sink to the bottom of your bowl)

3) Pour into bowl and layer with your favorite toppings: berries, coconut flakes, granola, nuts, seeds, etc
